Foodhi Classics: Korean Reuben
A bestseller at Foodhi, the Korean Reuben is our take on a Reuben sandwich. We load buttered rye with our bulgogi seitan, house cheddar, bong bong sauce, and of course, our crave-worthy kimchi.
This recipe came about March 2024. A lot of you were asking for a St. Patty's reuben and after a little thought, I unleashed this beast as a daily special. We became a Korean Reuben stand that day, and after we sold out, a mob with pitchforks and torches demanded it's return (okay, some of those "requests" were threatening). I had no interest in doing a traditional reuben, I like to keep our menu unique, but I was happy this take on the ubiquitous sandwich went over well. After continued friendly pressure from regulars, I updated the menu change and included this beast of a sandwich.
I like to think this one is a hit because it's creative and features scratch-made tastiness (seitan, cheddar, bong bong, and kimchi....oh my!). After all, due to skyrocketing costs, scratch-made cuisine is becoming less and less common these days. Of course, chances are people just want something familiar and a Reuben meets that craving head on. In all likelihood, it's both and that's cool too.
